No-meat Tater Tot Casserole (vegetarian)

Ingredients
- Servings: 6
- 1 chopped onion
- 3 stalks chopped celery
- 2 tablespoons olive oil
- 1 (10 1/2 ounce) can condensed cream of celery soup
- 1 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 3 tablespoons half-and-half (or milk)
- 1 (32 ounce) package frozen frozen tater tots
- 1 cup shredded cheddar cheese
Recipe
- 1 saute onion and celery in oil until tender.
- 2 set aside to cool slightly.
- 3 scrape into mixing bowl.
- 4 add soup, garlic powder, pepper, and half and half.
- 5 mix well.
- 6 add frozen tater tots (reserve a handful first) and toss well.
- 7 spray a casserole dish (i use my 13x9 square pyrex baking dish) with pam.
- 8 pour mixture into dish.
- 9 arrange reserved tots over top.
- 10 cover with cheese.
- 11 bake at 350 for 45 to 50 minutes until cheese is melted and just barely starting to brown.
- 12 cool slightly before serving.
