No-meat Tater Tot Casserole (vegetarian)

Total Time: 1 hr 5 mins Preparation Time: 5 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 1 chopped onion
  • 3 stalks chopped celery
  • 2 tablespoons olive oil
  • 1 (10 1/2 ounce) can condensed cream of celery soup
  • 1 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 3 tablespoons half-and-half (or milk)
  • 1 (32 ounce) package frozen frozen tater tots
  • 1 cup shredded cheddar cheese

Recipe

  • 1 saute onion and celery in oil until tender.
  • 2 set aside to cool slightly.
  • 3 scrape into mixing bowl.
  • 4 add soup, garlic powder, pepper, and half and half.
  • 5 mix well.
  • 6 add frozen tater tots (reserve a handful first) and toss well.
  • 7 spray a casserole dish (i use my 13x9 square pyrex baking dish) with pam.
  • 8 pour mixture into dish.
  • 9 arrange reserved tots over top.
  • 10 cover with cheese.
  • 11 bake at 350 for 45 to 50 minutes until cheese is melted and just barely starting to brown.
  • 12 cool slightly before serving.
