Ramen Noodle Soup

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 (15 ounce) can chicken broth
  • 1 1/2 cups water
  • 1 (1/16 ounce) package ramen noodles
  • 2 large eggs
  • 2 cups baby spinach
  • 1 tablespoon soy sauce
  • 1 green onion, finely chopped

Recipe

  • 1 bring broth and water to a boil in a large sauce pan.
  • 2 add ramen noodles (discard flavor packet).
  • 3 return to a boil and simmer, uncovered, until nearly done (about 3 minutes).
  • 4 beat eggs in a small bowl and pour into simmering soup.
  • 5 do not stir (eggs will serface in a cluster.
  • 6 heat 30 seconds.
  • 7 stir in spinach.
  • 8 simmer until wilted, about 1 minute.
  • 9 stir in 1 tablespoon of soy sauce.
  • 10 garnish with green onions.
